Downeast Maine Pumpkin Bread
The classic moist pumpkin bread from Down East is spiced with cinnamon, ginger, nutmeg and cloves. This bread improves with age, so plan to make it a day ahead if possible.
An old Maine favorite, this spicy bread is made healthier with the addition of whole wheat flour, pumpkin seeds, and raisins. We've also used less sugar, and replaced the oil with butter. It's best if it sits around a day, so plan on making it ahead of time.
This recipe is absoluteyl wonderful. I first made it for husband who is stationed in Afghanistan and it was a huge hit. Even after traveling in the mail for a week halfway across the world this pumpkin bread was still moist and delicious!
I have tried many pumpkin bread recipes all claiming to be "the best", but by far this is the only one I've tried that lives up to that claim! Moist, flavourful, warmly comforting loaf! I did add another half amount of the spices called for (i.e. instead of 1 teaspoon, I used 1 1/2 teaspoon etc.) and I threw in some chocolate chips, as suggested by others. I had doubled the recipe, so had loaves to give away, and I actually got phone calls to tell me it was the best pumpkin loaf my family/friends/neighbours had ever eaten! I can understand why so many people gave this 5 stars!
I have found this bread to be INCREDIBLE with the changes I've made. I've made this 4 times now. I bake for 27 mins in mini loaf pans. I cut half a cup of sugar from the recipe, and halved the cloves and ginger. I add an overflowing tsp of vanilla and a huge heaping tsp of pumpkin pie spice. I made sure my tsp of cinnamon was huge and overflowing as well. I think the cinnamon is key in the amazing flavor. I have made this also as muffins, and I think it turns out best in muffin form. This bread is also good with raisins.
Best pumpkin bread recipe I've ever used, every time I make it there are always people asking me for this recipe. Love it! Will always use this recipe for my pumpkin bread needs!
OH MY GOODNESS!!! I have tried many, MANY, different recipes for pumpkin bread, and this recipe is leaps and bounds above the rest. I followed the advice from other reviewers who suggested to double the spices, so I did!! Doing so, give the bread a very flavorful taste. YOU'RE GONNA LOVE THIS BREAD!!!
