Simply awful! Never mind that there were no spices called for in the body of the meal. I can add my own chili powder and cumin., not to mention some frozen corn and sliced olives?. But the topping was simply dreadful. When it says a "box" of cornbread mix, that would pretty much imply Jiffy, which was way too sweet. Icky sweet.?? And the can of cream corn plus egg made it way too goopy. The cheese topping was burned, and? the corn bread hadn't set, so we were eating soft, half-cooked sweet cornbread. I just peeled the topping off, put it in the compost bin, saved the meat mixture and I'll make it into something else. But I don't get the popularity of this terrible recipe. My mom always put Fritos on top and that's what I do. Fritos with cheese on them baked are super yummy. It's like getting nachos on top Tamale pie!
used ground turkey instead of beef. 1T of minced garlic, 1t Cumin, 1T chili powder. Only used 1 can rinsed black beans, 1 can diced tomatoes with green chilies. 20min in glass casserole dish. serve with salsa and sour cream. enjoy!
