Mexican Shepherd's Pie Recipe
This is a Mexican version of the Shepherd's Pie that is so popular in the UK. I decided to try this one night when I did not have any mashed potatoes. Its cheap, quick and easy...and my kids loved it! Serve with a tossed green salad for a great family meal!
Great shepherd's pie with a kick. A classic casserole spiced up with the flavors of Mexico. Adjust seasonings according to your personal taste.
5 stars with the changes I made. 1st off, this can totally be a one dish recipe if you have a big enough pan that can go in the oven. Cooked beef and onion, added tomotoes, green chilies and taco season. topped with corn, black beans and mexican cheese. Used 2 boxes of jiff corn mix. then threw into oven as directed. YUM!
A little bland for me the first time around. Second time though, I used chipotle diced tomatoes, two jalapenos, and a can of kidney beans. Yum.
Very nice: added black beans bell peppers (green, yellow, orange) mixed corn in beef mixture layered with cheese... next time will add two boxes of corn bread but great nonetheless... Hubby thinks would be great with potatoes as well :)
This Mexican-inspired shepherd's pie with taco seasoning, taco sauce, and pan-fried onions and peppers, gets a nice nutty flavor from Emmentaler cheese.

Shepherd's pie has endless variations - this tempting version uses Veggie Ground Round and is topped with sweet potato mash.
This shepherd's pie is made with sharp Cheddar cheese, smoked paprika, stewed tomatoes, and lamb. Use smoked Cheddar, if you have it.
