I really enjoyed this dish. Very easy and healthy. I used lemon balsamic vinegar and skipped the zest. I also paired it with the recipe for "slow roasted tomatoes with feta, olives and pine nuts" from allrecipes instead of adding tomatoes directly to the chicken. I marinated and then cooked the chicken on the grill.
Delicious. I used boneless chicken thighs instead of chicken breasts. I also skipped cherry tomatoes and used the suggestion of another reviewer by putting a can of roasted tomatoes into the marinade.

We thoroughly enjoyed this dish. I did double the marinade so that we would have enough for the rice. I cooked Basmati rice, as I did not have any brown rice. The addition of the cherry tomatoes did not really add much to the dish and the skin of the tomatoes were tough. Other than that, it was very good. I also used boneless, skinless thighs rather than chicken breasts. I made enough for left overs and I did remove the tomatoes and if I make this again, I will not use cherry tomatoes. I am too lazy to skin a pint of cherry tomatoes. An enjoyable change to the routine chicken recipes.
AgaIn - if you need to tweak and alter so much why don't you list your own recipe. After reading so many reviews - all of which add alter and change so many things I wonder ... If you're like me and are just looking for something different and a pretty decent recipe to start with. Just follow the suggested recipe. It's very good.
